Why Older Commercial Food Equipment Is Not Always Bad

It is easy to assume newer equipment automatically means better equipment. But in a commercial kitchen, that is not always the case. Plenty of older equipment continues to perform reliably year after year, especially when it has been properly maintained and repaired along the way.
